Cook the Pasta

Bring a large pot of salted water to a boil. Add the wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables

While the pasta is cooking, julienne the cucumber and carrots. Slice the scallions thinly, separating the white and green parts.

Cook the Eggs

In a small saucepan, bring water to a boil. Gently add the eggs and boil for about 7 minutes for soft-boiled. Remove from heat and transfer to an ice bath to cool. Once cool, peel and slice.

Make the Sauce

In a bowl, combine 1/4 cup of sesame paste, 1/4 cup of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of chili oil. Whisk until smooth and well combined.

Combine Everything

In a large bowl, combine the cooled pasta, cucumber, carrots, scallions (white parts), and the sauce. Toss until everything is evenly coated.

Serve

Plate the cold peanut noodles and top with sliced eggs and the green parts of the scallions. Drizzle with extra sesame oil if desired.
