Method

Pasta Preparation

1

Cook the Spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Once cooked, reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Sicilian Sauce Preparation

2

Heat Olive Oil

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

3

Add Chili Flakes

Stir in the red chili flakes and cook for an additional 30 seconds.

4

Incorporate Tomatoes

Pour in the crushed canned tomatoes, followed by the rinsed capers and sliced green olives. Stir to combine.

5

Season the Sauce

Season the sauce with salt and black pepper. Simmer the sauce for about 15-20 minutes, stirring occasionally until it thickens slightly.

6

Add Fresh Basil

Remove from heat and stir in the chopped fresh basil, mixing well.

Combine and Serve

7

Combine Pasta and Sauce

Add the cooked spaghetti to the skillet with the sauce. If the sauce is too thick, add some reserved pasta water to reach desired consistency. Toss until the spaghetti is well coated.

8

Plate and Garnish

Serve the pasta in bowls, garnishing each portion with grated Parmesan cheese and extra basil leaves.
