Prepare the Wagyu Patties

Shape the Wagyu beef into two equal-sized patties, ensuring they are slightly larger than the buns since they will shrink while cooking. Season both sides with salt and pepper.

Cook the Patties

Heat a grill or skillet over medium-high heat. Place the patties on the grill and cook for 4-5 minutes on one side. Flip the patties, place a slice of aged cheddar cheese on each, and cook for an additional 3-4 minutes or until the cheese is melted and the patties reach your desired doneness.

Prepare the Buns

While the patties are cooking, split the benne seed buns and lightly toast them on the grill or in a toaster until golden brown.

Assemble the Burger

Spread dijonnaise (a mix of Dijon mustard and mayonnaise) generously on the bottom half of each bun. Place the cooked Wagyu patties with melted cheddar on top, then cover with the top half of the bun. Serve immediately.
