Directions

  1. 1

    Prepare the Beef Tenderloin

Preheat your oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels and season it generously with salt and black pepper.

  2. 2

    Sear the Meat

In a large skillet, heat olive oil over medium-high heat. Once hot, add the beef tenderloin and sear on all sides until browned, about 3-4 minutes per side.

  3. 3

    Add Aromatics

Add minced garlic, chopped rosemary, and thyme to the skillet. Sear for another minute until fragrant.

  4. 4

    Roast in the Oven

Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.

  5. 5

    Make the Red Wine Sauce

Remove the skillet from the oven and transfer the beef to a cutting board. Add red wine to the skillet and bring to a simmer. Cook until reduced by half, about 5-7 minutes. Stir in the butter until melted and smooth.

  6. 6

    Serve

Slice the beef tenderloin and serve it drizzled with the red wine sauce.
