Method
Chicken Caesar Wrap (per 4 wraps)
Prepare chicken
If chicken is not cooked, poach or roast two medium chicken breasts until internal temperature reaches 74°C (165°F). Let rest, then shred or slice into bite-size pieces (use 600 g total).
Dress chicken
In a bowl combine shredded chicken, 3 tablespoons Caesar dressing, 1 teaspoon lemon juice and 1/2 teaspoon freshly ground black pepper. Toss until evenly coated.
Assemble wraps
Lay a flour tortilla flat. Place 1 cup chopped Romaine lettuce in the middle, one-quarter of the dressed chicken, and 1/4 cup grated Parmesan. Fold the bottom edge up, fold sides in, then roll tightly to enclose. Repeat for remaining tortillas.
Serve
Slice each wrap in half on the bias if desired. Plate with 1 cup potato chips and 1 pickle spear per wrap. Serve immediately.
Buffalo Chicken Wrap (per 4 wraps)
Make buffalo chicken
In a small saucepan or microwave-safe bowl, combine 1/2 cup hot sauce and 2 tablespoons melted butter. Stir to combine. Toss 600 g shredded cooked chicken in the sauce until evenly coated.
Assemble wraps
Warm tortillas briefly (15 seconds each in microwave or 30 seconds in dry skillet) to make them pliable. Spread about 2 tablespoons ranch dressing down the center of each tortilla. Divide the buffalo chicken among tortillas, then top with 1 cup shredded lettuce and 1/4 cup shredded cheddar each.

Prepare vegetables
Wash and dry salad greens. Thinly slice cucumber and red bell pepper, and julienne the carrot.
Roll & serve
Fold bottom, fold sides and roll tightly. Cut in half if desired. Plate with 1 cup chips and one pickle spear per wrap.
Common Sides & Plating
Portion 1 cup (approx.) of chips alongside each wrap and add one pickle spear. For hot wraps (Buffalo or warmed Caesar), serve immediately so chips remain crisp.
Optional: Add a small ramekin of extra dressing (Caesar or ranch) for dipping.
