Sriracha-Maple Sauce
Make the sauce
Whisk together maple syrup, sriracha, melted butter, apple cider vinegar, and salt in a small bowl until smooth. Taste and adjust heat by adding more sriracha if desired. Set aside at room temperature.
Sandwich
Prepare the egg batter and bread
In a shallow dish wide enough for the bread, whisk together 3 large eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and 1/4 teaspoon salt until homogeneous. Preheat a large skillet or griddle over medium heat and add 1 tablespoon (1 tbs) unsalted butter and 1 tsp oil to coat the surface. Dip each slice of bread in the egg mixture for about 5–8 seconds per side, letting it soak briefly but not become soggy. Shake off excess.
Cook the French toast
Place the soaked bread slices on the preheated skillet. Cook 2–3 minutes per side, or until golden brown and slightly crisp, adding the remaining 1 tbs butter as needed between batches. Transfer cooked slices to a plate and keep warm in a low oven (about 200°F / 95°C) while you finish other components.
Prepare the meat
If using bacon: cook 4 strips in a skillet over medium heat until crisp, drain on paper towel. If using sausage patties: cook according to package or shape and cook 3–4 minutes per side until cooked through. If using ham: warm 4 slices in the skillet until edges caramelize slightly. Keep hot and nearby for assembly.
Fry the eggs
In a clean nonstick skillet, heat over medium-low and add a small dab of butter or a spray of oil. Crack 2 large eggs into the pan and fry sunny-side-up, or flip to cook over-easy if you prefer slightly set yolks. Season with the remaining salt (1/4 tsp) and black pepper. Cook until whites are set but yolks still runny (about 2–3 minutes sunny-side). If you want firmer yolks, cover the pan for 30–45 seconds.
Assemble the sandwich
Place one slice of French toast on a work surface, top with 1 slice of American cheese, the chosen cooked meat (4 pieces or 1 patty split), then place both fried eggs on top of the meat. Add the second slice of American cheese, then top with the second slice of French toast to form a sandwich. Lightly press to help cheese meld; if desired, return to the warm skillet for 20–30 seconds per side to melt cheese and warm sandwich through.
