Prepare sriracha-maple bacon

Preheat a skillet over medium heat. In a small bowl combine maple syrup and sriracha. Lay bacon strips in the skillet in a single layer. Cook 3-4 minutes without moving until the edges start to crisp, flip and reduce heat to medium-low. Brush the maple-sriracha mixture on the bacon after flipping. Continue cooking another 3-4 minutes, brushing once more, until bacon is caramelized and cooked through but not burnt. Transfer bacon to a paper towel-lined plate to drain. Reserve skillet fat for cooking the burger, wiping excess if there is too much.

Form and season patty

Form the 6 oz ground beef into a loose patty about 3/4 inch thick, creating a slight indentation in the center with your thumb (this prevents doming). Season both sides with kosher salt and freshly ground black pepper immediately before cooking.

Cook the patty

Heat the reserved bacon skillet over medium-high heat until shimmering (or use a separate heavy skillet). Add 1/2 tablespoon unsalted butter and let it melt and foam. Place the patty in the skillet and cook undisturbed 3-4 minutes for medium-rare to medium (adjust 1-2 minutes per side for desired doneness). Flip once and cook another 3-4 minutes. In the last 30-45 seconds of cooking, place a slice of cheddar on the patty and cover the skillet briefly to melt the cheese.

Toast the bun

While the patty rests, split the brioche bun and toast cut sides in the same skillet (butter side down optional) for about 30-60 seconds until lightly golden.

Prepare mayo

Spread 1 tablespoon mayonnaise on the bottom half of the toasted brioche bun.

Season tomato

Lightly season the tomato slices with 1/8 teaspoon salt and a pinch (1/16 teaspoon) black pepper.

Assemble burger

Place the lettuce leaf on top of the mayo, then set the cheese-topped patty on the lettuce. Layer the warm sriracha-maple bacon strips on the patty. Add the seasoned tomato slices and red onion rings. If using, add the pickled jalapeños for a bit of heat. Spread a small drizzle of any remaining maple-sriracha on the top bun if desired, then place the top bun to finish.

Rest and serve

Let the assembled burger sit 1 minute so juices settle, then serve immediately while warm.
