Preparation of the Truffle Mornay Sauce

Make the Roux

In a saucepan, melt butter over medium heat. Add flour and stir continuously to form a roux, cooking for about 2 minutes until lightly golden.

Add Milk

Gradually whisk in the milk to avoid lumps. Continue to cook until the sauce thickens, about 5 minutes.

Finish the Sauce

Remove from heat, stir in Parmesan cheese, white truffle oil, salt, and black pepper. Set aside.

Assembling the Croque Madame

Prepare the Bread

Toast the brioche slices until golden brown.

Cook the Ham or Mushrooms

In a skillet, lightly sauté the ham or mushrooms until heated through.

Fry the Eggs

In the same skillet, fry the eggs sunny side up.

Assemble the Dish

On one slice of toasted brioche, layer the ham or mushrooms, pour over some truffle mornay sauce, and sprinkle with cheddar cheese. Top with the second slice of brioche.

Add the Egg

Place the sunny side up egg on top of the sandwich and drizzle with more truffle mornay sauce if desired.
