Preparation and Smoking

Brine the Salmon

In a bowl, mix together the coarse sea salt, brown sugar, and black pepper. Rub this mixture evenly over the salmon fillet. Place the salmon in a resealable plastic bag or covered dish and refrigerate for at least 4 hours, preferably overnight.

Prepare the Smoker

Soak the wood chips in water for at least 30 minutes before smoking. This helps create a better smoke when placed on the heat.

Smoke the Salmon

Preheat your smoker to 175°F (80°C). Drain the wood chips and place them in the smoker box. Remove the salmon from the brine, rinse it under cold water, and pat it dry with paper towels. Place the salmon on the smoker rack, skin side down. Smoke for about 1.5 to 2 hours, or until the salmon reaches an internal temperature of 145°F (63°C).

Cool and Serve

Once done, remove the salmon from the smoker and let it cool to room temperature. Optionally, sprinkle dill weed on top before slicing. Serve smoked salmon with crackers, cream cheese, or on a bagel.
