Preparation Steps
Prepare the Roasted Tomato Sauce
Preheat your oven to 200°C (400°F). Halve the tomatoes and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until soft and slightly caramelized. Once done, blend the tomatoes to form a sauce and set aside.
Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Remove from heat.
Heat the Beans
In a small saucepan, heat the Rancho Gordo beans over low heat. Add a pinch of salt and stir until warmed through.
Toast the Bread
While the beans are heating, toast the bread slices until golden brown.
Assemble the Dish
On each slice of grilled bread, spread some of the roasted tomato sauce. Top with a portion of the warmed beans, followed by the chorizo. Carefully place a poached egg on top of each. Sprinkle with grated cheddar cheese and serve immediately.
