Prepare Pastry Cream

In a bowl, whisk together the egg yolks, remaining sugar, and cornstarch until smooth.

Slowly pour the hot milk into the egg mixture while whisking constantly. Then return to the saucepan and cook over medium heat until thickened.

Remove from heat, stir in the butter and vanilla extract, and let cool.

Make Chocolate Ganache

In a small saucepan, heat the heavy cream until simmering.
