Method
For one cocktail
Prepare glass
Fill a highball glass with ice cubes (about 1 cup) to chill the glass.
Add juice
Pour 2 oz strained fresh orange juice into the chilled glass. If you prefer another fresh juice (grapefruit or pineapple), substitute 2 oz in place of the orange juice.
Optional balance
If the juice is very tart, add 1/2 teaspoon simple syrup. For extra brightness, add 1/4 teaspoon fresh lime juice. Do not add if your juice is already sweet enough.
Top with seltzer
Slowly pour 6 oz chilled house-made hard seltzer over the back of a spoon or down the inside of the glass to preserve carbonation and create a gentle layering effect.
Stir gently
Give the drink one or two gentle swirls with a bar spoon to combine juice and seltzer without flattening the bubbles.
Garnish and serve
Garnish with an orange wheel on the rim and a mint sprig if desired. Serve immediately with a straw or stirrer.
Batch (makes 8 cocktails)
In a large pitcher or beverage dispenser, combine 16 oz fresh strained orange juice and (if using) 4 tablespoons simple syrup and 2 tablespoons fresh lime juice. Stir until the simple syrup is fully incorporated.
Add 48 oz chilled house-made hard seltzer to the pitcher slowly to retain carbonation. Stir gently once or twice to distribute the juice mixture through the seltzer—avoid vigorous stirring.
Fill 8 highball glasses with ice (about 1 cup per glass). Pour the seltzer-mosa evenly over the ice.
Garnish each glass with an orange wheel and optional mint sprig. Serve immediately.
