Method

Preparation of Marinade

    Prepare Marinade

    In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, fresh thyme, fresh rosemary, salt, and black pepper until well combined.

Marinating Vegetables

    Marinate Vegetables

    Place mushrooms, sliced zucchini, squash, and bell peppers into a large bowl. Pour the marinade over the vegetables and toss until they are well coated. Cover and let marinate for at least 30 minutes.

Cooking Ancient Grains

    Cook Quinoa

    In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let sit, covered, for 5 minutes.

    Fluff and Season Quinoa

    Fluff the cooked quinoa with a fork. Stir in chopped fresh parsley and lemon juice. Set aside.

Grilling Vegetables

    Grill Vegetables

    Preheat the grill to medium-high heat. Thread the marinated vegetables onto skewers or place them directly on the grill. Grill for 5-7 minutes on each side, or until the vegetables are tender and have grill marks.
