Method

Infusing Tequila

  1. 1

    Prepare the Infusion

In a clean glass jar, combine 750 ml of reposado tequila with 1 diced mango and 1-2 sliced habanero peppers. Seal the jar and let it infuse in a cool, dark place for 3-5 days, shaking gently each day. Taste the infusion daily to achieve the desired level of spiciness.

  2. 2

    Strain the Infused Tequila

Once the infusion is complete, strain the tequila through a fine mesh strainer or cheesecloth into a clean bottle, discarding the solids. Your mango habanero infused tequila is now ready to use.

Mixing the Margarita

  1. 3

    Prepare the Glass

Rim a chilled margarita glass with a lime wedge and dip it into sea salt to coat the rim lightly.

  2. 4

    Shake the Ingredients

In a cocktail shaker filled with ice, combine 2 oz of the mango habanero infused reposado tequila, 1 oz of fresh lime juice, and 0.5 oz of agave syrup.

  3. 5

    Shake Well

Shake vigorously for about 15-20 seconds until well chilled.

  4. 6

    Strain and Serve

Strain the mixture into the prepared margarita glass filled with ice. Optionally, garnish with a lime wedge.
