    Prepare the Cheeses

    Grate the Tillamook cheddar and mozzarella cheeses into a mixing bowl. Cut the brie into small pieces, discarding the rind if preferred, and add it to the bowl. Finally, cut the havarti into small cubes and mix all cheeses together until evenly combined.

    Prepare the Bread

    Lay out the slices of rustic wholegrain bread on a clean surface. Ensure each slice is evenly thick for optimal grilling.

    Assemble the Sandwiches

    Take two slices of bread and spread a generous amount of the cheese mixture evenly onto one slice. Top with another slice of bread to create a sandwich. Repeat this process for the remaining two slices of bread.

Cooking

    Preheat and Butter the Pan

    In a skillet or frying pan, heat over medium heat. While it heats, spread 1 tablespoon of unsalted butter on one side of each sandwich.

    Grill the Sandwiches

    Once the pan is hot, place the sandwiches in the pan with the buttered side down. Cook for 3-4 minutes until the bread is golden brown and crisp. Spread an additional tablespoon of butter on the top side of the sandwich.

    Flip and Finish Cooking

    Carefully flip the sandwiches using a spatula and grill the other side for another 3-4 minutes until golden brown and the cheeses are melted. If necessary, reduce the heat to ensure the bread does not burn while the cheese melts.

    Once both sides are golden brown and the cheese is melted, remove the sandwiches from the pan. Let them cool for a minute, then cut in half and serve hot.
