Preparation of Vegetables

Slice the Vegetables
Wash and slice the zucchini and yellow squash into 1/4 inch thick rounds. Clean the mushrooms and slice them. Cut the roasted red pepper into strips and chop the tomato into thick slices.

Marinate the Vegetables
In a large bowl, combine the sliced zucchini, yellow squash, mushrooms, roasted red peppers, and tomato. Drizzle with olive oil, salt, and pepper to taste. Toss well to coat and let them marinate for about 15 minutes.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Assembling the Sandwich

Prepare the Ciabatta
Slice the ciabatta loaf in half horizontally. You can toast it lightly on the grill for a few minutes if desired.

Layer the Ingredients
Spread a generous layer of pesto on the bottom half of the ciabatta. Layer the grilled vegetables evenly over the pesto. Tear the buffalo mozzarella into pieces and arrange them on top of the veggies.

Finish the Sandwich
Place the top half of the ciabatta on the sandwich. If desired, you can press the sandwich gently on the grill for a minute to warm it through.
