Preparation

Prepare the Bread
Take 2 slices of sourdough bread and place them on a clean cutting board.

Prepare the Cheese
Grate 1 cup of cheddar cheese and 1 cup of mozzarella cheese and mix them in a bowl. Set aside.

Butter the Bread
Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.

Assemble the Sandwich
Place one slice of bread, buttered side down, on a skillet or frying pan over medium heat. Add the mixed cheeses on top and cover with the second slice of bread, buttered side up.

Grill the Sandwich
Cook the sandwich for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwich over, using a spatula, and grill the other side for another 3-4 minutes until golden brown and the cheese is melted.

Remove and Serve
Once both sides are golden and the cheese is melted, remove the sandwich from the skillet. Let it cool for a minute before slicing it in half and serving.
