Method
Potato Chips Preparation

Dry Potatoes
After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them dry to remove moisture.

Heat Oil
In a large deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Chips
Carefully add the potato slices to the hot oil in small batches. Fry until golden brown and crispy, about 3-5 minutes per batch.

Drain and Season
Remove the chips with a slotted spoon and place them on paper towels to drain excess oil. Sprinkle with salt while still hot.
Chimichurri Preparation

Combine Ingredients
In a bowl, combine the chopped herbs, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well.

Let Rest
Allow the chimichurri to sit for at least 15 minutes before serving to let the flavors meld.
Piri Piri Sauce Preparation

Roast Peppers
Roast the red bell peppers over an open flame or under the broiler until charred. Let cool, peel, and remove seeds.

Blend Ingredients
In a blender, combine the roasted peppers, minced garlic, red wine vinegar, olive oil, paprika, and salt. Blend until smooth.

Adjust Seasoning
Taste and adjust seasoning as needed. Add more salt if desired.
Chermoula Preparation

Mix Ingredients
In a bowl, combine the chopped herbs, ground cumin, ground coriander, olive oil, lemon juice, and salt. Mix until well combined.

Let Rest
Let the chermoula sit for at least 10 minutes before serving to enhance the flavors.
Aji Sauce Preparation

Combine Ingredients
In a small bowl, mix the aji amarillo paste, lime juice, minced garlic, cilantro, and salt.

Taste and adjust the seasoning. You can add more lime juice or salt to suit your preference.
