Make the Roux
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until it turns a deep brown color, about 15-20 minutes. Be careful not to burn it.

Stir in the chicken pieces and sausage, cooking until the chicken is browned, about 5 minutes. Then add the Cajun seasoning, bay leaves, salt, black pepper, and thyme. Mix well.

Pour in the chicken broth and add the sliced okra and diced tomatoes. Bring to a boil, then reduce to a simmer. Let it cook for 30-40 minutes, stirring occasionally.

While the gumbo simmers, cook the white rice according to package instructions. Typically, this involves combining 1 cup of rice with 2 cups of water, bringing it to a boil, then reducing to a simmer for about 18 minutes.

While the rice cooks, grill the slices of rustic bread until golden brown and crisp.

Once the gumbo has thickened and flavors have melded, remove bay leaves. Serve in bowls over a scoop of white rice, with grilled rustic bread on the side.
