Method
Preparing the Salad Base

Prepare Ancient Grains
Cook the ancient grains of your choice according to package instructions. Allow to cool.

Mix the Greens
In a large salad bowl, combine the mixed greens, diced avocado, diced cucumber, and cooked ancient grains.
Making the Balela

Combine Ingredients
In a medium bowl, combine the chickpeas, black beans, diced red onion, cherry tomatoes, apple cider vinegar, olive oil, salt, and pepper.

Mix Well
Toss the mixture until well combined. Let it marinate for at least 15 minutes for flavors to meld.
Preparing the Vinaigrette

Mix Vinaigrette Ingredients
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
Assembling the Salad

Combine Everything
Add the balela to the salad base and toss gently. Drizzle the lemon vinaigrette over the salad and toss again to coat.

Sprinkle the grated parmesan cheese on top of the salad before serving.
