Method

Chips Preparation

    Slice the Potatoes

    Wash and peel the russet potatoes. Using a mandoline or sharp knife, slice the potatoes into thin rounds, about 1/8 inch thick.

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, frying in batches. Fry until golden brown and crispy, about 3-5 minutes. Use a slotted spoon to remove the chips and place them on paper towels to drain excess oil. Sprinkle with sea salt while still hot.

Chimichurri Preparation

    Mix Ingredients

    In a mixing bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well until all ingredients are incorporated.

    Let it Rest

    Allow the chimichurri to sit for at least 15 minutes at room temperature to let the flavors meld.

Piri Piri Sauce Preparation

    Blend Ingredients

    In a blender or food processor, combine chopped red chili peppers, minced garlic, lemon juice, olive oil, paprika, and salt. Blend until smooth.

    Taste and Adjust

    Taste the piri piri sauce and adjust salt or lemon juice if needed.

Chermoula Preparation

    Mix Ingredients

    In a bowl, combine chopped cilantro, cumin, paprika, minced garlic, lemon juice, olive oil, and salt. Stir well to combine.

    Let it Rest

    Allow the chermoula to sit for at least 15 minutes at room temperature to enhance the flavors.

Aji Sauce Preparation

    Blend Ingredients

    In a blender or food processor, combine chopped aji amarillo peppers, minced garlic, lemon juice, olive oil, and salt. Blend until smooth.

    Taste and Adjust

    Taste the aji sauce and adjust salt or lemon juice if needed.
