Bacon Jam Preparation

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess fat. Leave about 2 tablespoons of bacon fat in the skillet.

    Sauté the Onion

    In the same skillet with the reserved bacon fat, add the chopped yellow onion. Sauté over medium heat until the onion is soft and translucent, about 5-7 minutes.

    Combine Ingredients

    Chop the cooked bacon into small pieces and add it back to the skillet with the sautéed onion. Stir in the brown sugar, apple cider vinegar, maple syrup, fresh thyme, and black pepper.

    Simmer the Jam

    Add water to the skillet and bring the mixture to a simmer. Reduce the heat to low and let it cook uncovered for about 30-40 minutes, stirring occasionally, until the mixture thickens and becomes jam-like.

    Once thickened, remove from heat and let it cool slightly. Transfer the mixture to a food processor and pulse until you achieve your desired consistency (smooth or chunky).

    In a medium bowl, combine the goat cheese, cream cheese, and heavy cream. Use an electric mixer to beat the mixture until smooth and creamy.
