Chimichanga Preparation

Prepare the Filling

In a bowl, mix the braised chicken, refried beans, shredded cheese, and spices. Season with salt and pepper to taste.

Assemble the Chimichangas

Place a tortilla on a flat surface, add about 1/4 of the filling mixture in the center. Fold in the sides and roll tightly to enclose the filling.

Fry the Chimichangas

In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the chimichangas seam-side down. Fry until golden brown and crispy, about 3-4 minutes on each side.

Serve

Remove from oil and drain on paper towels. Serve hot with sour cream, guacamole, and salsa on the side.
