Build and stir

Chill a coupe or Nick & Nora glass by filling it with ice and a little water; set aside. In a mixing glass, combine 2 oz Alberta Springs 10 Yr, 0.5 oz Averna, 0.25 oz Cynar, and 3 dashes orange bitters. If you prefer a slightly sweeter, rounder drink, add 0.25 tsp simple syrup (optional).

Stir to chill and dilute

Fill the mixing glass with large, cold ice cubes. Using a bar spoon, stir gently but firmly for 20–30 seconds (about 15–20 full revolutions) until the mixture is well chilled and slightly diluted. The liquid should feel very cold to the back of your hand and the outside of the mixing glass should develop a slight frost.

Prepare glass

Dump the ice and water from the chilled coupe or Nick & Nora and quickly wipe it if needed to remove excess water.

Strain and garnish

Double-strain the stirred cocktail into the chilled glass using a julep or Hawthorne strainer (and a fine strainer if you want to catch tiny shards of ice). Express the oils of an orange twist over the drink by holding the twist skin-side down above the cocktail and giving it a quick squeeze, then rim the glass with the peel and drop it in as a garnish. Optionally, add a Luxardo cherry on a pick and rest across the rim or drop it into the drink.

Serve immediately while cold. Sip slowly to appreciate the interplay of the Canadian whiskey's grain character with Averna's herbal bittersweetness and Cynar's vegetal, bitter accents, brightened by orange bitters and the citrus oil from the twist.
