Place the Stolpman Vin Gris bottle in the refrigerator for at least 2 hours prior to serving, or in an ice bucket with equal parts ice and water for 20–30 minutes to reach a serving temperature of about 50–55°F (10–13°C).

Chill wine

If the bottle has sediment or you prefer slightly aerated wine, decant briefly into a small pitcher for 5–10 minutes before serving. Otherwise serve directly from the chilled bottle.

Select white/rosé-style glasses (narrower bowl than red wine glasses) to showcase the wine’s aromatics and keep it cool. Rinse glasses with cold water and dry, or briefly chill them in the fridge if desired.

Fill each glass about one-third full (approximately 4–5 oz / 120–150 ml) to allow room for swirling and aromas.

Keep the bottle in the ice bucket on the table for self-service so guests can top up as needed to maintain temperature.

Arrange cheeses: place slices of soft-ripened cheese (Brie) and aged cheddar or Manchego on a wooden board or platter, leaving space between them.

Fold the prosciutto into loose ribbons and place beside the cheeses for easy picking.

Scatter Marcona almonds in a small bowl or cluster on the board. Place cornichons/pickled shallots nearby to provide a briny contrast.

Add crackers around the cheeses and meats. For presentation, fan crackers or stack them in small piles.

Place fresh strawberries or red grapes on the board to echo the wine’s red-fruit notes and to cleanse the palate.

Drizzle honey lightly over a wedge of soft cheese or place honey in a small bowl; offer extra-virgin olive oil in a small dish if guests want to drizzle on crackers or bread.

Provide small cheese knives, toothpicks, and napkins so guests can serve themselves.

Pour a small amount of wine and observe the color — the Vin Gris will have a pale, translucent red/rosé hue. Swirl gently and inhale to appreciate aromatics: expect bright red fruit, floral notes, and subtle savory or herbal elements.

Taste with contrasts: the Vin Gris’s acidity will pair well with the creamy Brie, cut through the fat of prosciutto, and complement the nuttiness of almonds and Manchego. Try a bite combining cheese, prosciutto, and a strawberry for a balanced contrast.

Keep the wine chilled between pours. If it warms and tastes flabby, return the bottle to the ice bucket for a few minutes.
