If the bottle is not already well chilled, place it in a wine bucket or large bowl filled halfway with ice and cold water. Submerge the bottle and chill for 20–30 minutes until the liquid reads about 45°F (7°C) on a wine thermometer or feels very cold to the touch.

Rapid chill (if needed)

Alternatively, place the bottle in the refrigerator for 3–4 hours prior to serving. Do not freeze.

Select chilled coupe or flute glasses. Rinse briefly with cold water, pour out excess and keep them inverted in the fridge or freezer for 5–10 minutes before serving for extra chill.

Prepare lemon twists by cutting a thin strip of lemon peel and twisting over the glass to release aromatic oils. Place one twist on the rim of each glass or drop gently into the glass.

Divide the fresh berries into four small bowls or plates. Place 1 tablespoon of soft fresh cheese on each plate and arrange a light breakfast pastry beside each portion. Reserve charcuterie slices on a small shared board for guests to add as desired.

Serve pastries warmed slightly (about 5 minutes at 300°F/150°C) if desired — warm pastries pair especially well with the brisk acidity of the wine.

With the bottle well chilled and pointed away from people and breakables, remove the foil and loosen the wire cage while keeping your thumb over the cork. Hold the cork and cage firmly, tilt the bottle to a 45° angle, and slowly twist the bottle (not the cork) to ease the cork out with a gentle sigh rather than a loud pop.

Open the bottle safely

Pour slowly into the center of each glass, filling to about two-thirds (roughly 4–5 oz / 120–150 ml) to allow aroma development. Pour in a gentle stream to preserve fine bubbles and avoid excessive foam. If serving a toast, pour into each glass after the cork is removed to preserve effervescence.

Pouring technique

Present the Bluebird Cuvée Brut with the prepared pairings. Encourage guests to taste the wine first, noting its dry, crisp character, bright acidity, and light autolytic notes (bread or brioche) — the qualities that earned it the nickname 'breakfast in a glass.'

Pair bites: a small smear of fresh cheese on pastry with a berry, or a fold of prosciutto or smoked salmon on toast with a sip of wine. The wine’s acidity refreshes the palate between bites.

Leftover bottle: re-cork with a sparkling wine stopper and refrigerate. Consume within 2–3 days for best bubble retention and flavor.
