Refrigerate the bottle of Santa Julia La Oveja Torrontés for at least 2 hours before serving, or place in an ice bucket with equal parts ice and water for 20–30 minutes to bring it to 8–10°C (46–50°F).

Chill the bottle

Select clean white wine glasses (or a tulip-shaped glass). If using a pitcher, add 1 cup of ice to chill it. Prepare optional garnishes and pairings: thinly slice 2 lemon rounds and half a green apple, and arrange 100 g of soft goat cheese or a small portion of mild ceviche.

Prepare glassware and accompaniments

Use a waiter’s corkscrew (or appropriate opener) to remove the cork cleanly. Wipe the bottle lip with a clean cloth if needed.

Open the bottle

Torrontés is typically enjoyed without long decanting. If the wine has been recently transported or is slightly unsettled, gently pour into a clean decanter and let rest for 10–15 minutes to allow aromas to breathe.

Decanting (optional)

Pour 120–150 ml per serving (about 5–6 oz) into each chilled glass. If serving a group and using a pitcher, pour the bottle over the ice-filled pitcher and then into glasses immediately to keep chilled, taking care to avoid excessive dilution.

Pouring

Float a lemon slice in each glass or serve the slices on the side. Offer green apple slices and soft goat cheese or mild ceviche alongside as suggested pairings—Torrontés’ floral and citrus notes complement light seafood, fresh cheeses, and crisp fruits.

Garnish & pair

Serve at 8–10°C. Note aromas of white flowers, citrus, and stone fruit on the palate. If not finished, re-cork the bottle with the original cork or a wine stopper and refrigerate; consume within 2–3 days for best freshness.
