In a mixing glass or small shaker, add the fresh mint leaves and agave syrup. Gently muddle (press and twist) 4–6 times to release the mint oils; do not over-muddle into a paste.

Muddle mint and sweetener

Add the fresh pineapple juice and fresh lime juice to the muddled mint and agave. Add 1–2 large ice cubes to chill briefly and stir for 10 seconds to combine and chill the mixture.

Add juices

Strain the muddled juice mixture into a chilled champagne flute or coupe to remove mint bits. Pour 5 oz (about 150 ml) of Santa Julia La Mantis sparkling wine gently down the side of the glass to preserve effervescence. Give the glass one gentle stir (one turn) to integrate.

Thread the pineapple wedge onto the rim (or float on top), place the mint sprig and lime wheel on the rim or beside the pineapple. Express the mint lightly over the glass (pinch and wave) to release aroma. Serve immediately while bubbly.
