When your favorite winemaker makes pasta wine, you cue up Chef's Pasta Primavera and wash it down with Sangiovese!

Bring a large pot of salted water to a rolling boil. Add 12 oz dried pasta and cook until just shy of al dente (1–2 minutes less than package instructions). Reserve 1 cup of the starchy pasta cooking water, then drain the pasta and set aside.

Cook the pasta

While the pasta cooks, heat 2 tbsp extra-virgin olive oil in a large wide skillet over medium-high heat. Add sliced garlic and cook 30–45 seconds until fragrant but not browned. Add the sliced onion and cook 2–3 minutes until translucent.

Prepare the vegetables

Add zucchini, summer squash, red bell pepper, and asparagus to the skillet. Sauté, stirring occasionally, for 4–6 minutes until vegetables are tender-crisp. Season with 1/2 tsp of the salt and 1/4 tsp freshly ground black pepper as they cook. Add cherry tomatoes in the last 1–2 minutes and cook until they begin to blister.

Push vegetables to the side of the skillet and add the remaining 1 tbsp olive oil and 1 tbsp butter in the center. Pour in 1 cup vegetable or chicken broth and 2 tbsp fresh lemon juice, scraping any brown bits from the pan. Bring to a gentle simmer for 1–2 minutes to concentrate flavors.

Build the sauce

Stir in 2 tbsp heavy cream or half-and-half if using, then add 3/4 cup grated Parmesan, 1/4 tsp red pepper flakes (optional), the remaining 1/2 tsp salt, and 1/4 tsp black pepper. Stir to create a silky sauce. If sauce seems too thick or vegetables absorbed liquid, add reserved pasta water 1/4 cup at a time to reach a light coating consistency.

Add the drained pasta to the skillet and toss with the sauce and vegetables over low heat for 1–2 minutes so the pasta finishes cooking and absorbs flavors. Add torn basil leaves and toss. Taste and adjust seasoning with additional salt, pepper, or lemon juice if desired.

Combine pasta and sauce

If using optional protein, add sliced grilled chicken or shrimp now and gently fold to combine so proteins warm through.

Remove from heat and stir in 1 tbsp unsalted butter until melted for a glossy finish. Sprinkle extra grated Parmesan and toasted pine nuts or walnuts if using.

Divide the pasta among 4 warm bowls. Garnish with extra torn basil and a crack of black pepper. Serve immediately with Monte Rio Sangiovese 2022 alongside—its bright acidity and cherry notes complement the tomato and lemon in the Primavera.
