Check the bottle for sediment, a damaged cork, or any signs of spoilage. Michelini i Mufatto Prospositos 2019 is a Chenin Blanc; it should smell fresh and have a bright color. If cork appears compromised or wine smells off (vinegar, wet cardboard), discard.

Inspect bottle

For optimal tasting temperature for Chenin Blanc, chill the bottle to 8–10°C (46–50°F). Place the bottle in the refrigerator for 1–2 hours before serving. If short on time, submerge in an ice bucket filled with ice and cold water for 20–30 minutes.

Chill wine

Place a clean towel on a stable surface. Use a waiter’s corkscrew or other wine opener: remove the foil, center the screw on the cork and twist in until one spiral remains, gently pull the cork out straight to avoid breakage. Wipe the bottle lip with a clean cloth after opening.

Open bottle

Chenin Blancs are typically enjoyable without prolonged aeration. If desired, pour a small amount into a decanter or swirl gently in the glass for 3–5 minutes to help volatile aromas open up.

Aeration (optional)

If using an ice bucket, fill the bucket with 6 cups of ice and 1 liter of cold water to create an even chill bath. Place the chilled bottle in the bucket, leaving the neck exposed for pouring. Replenish ice as needed to maintain temperature.

Prepare ice bucket

Use chilled white-wine glasses or stemmed glasses with a narrower bowl. Hold the glass by the stem to avoid warming the wine. Pour modest servings (about 120–150 ml / 4–5 oz) to allow room for swirling and nosing.

Select glassware

Arrange fresh goat cheese, thin green apple slices, and a small pile of roasted almonds on small plates or a serving board. The bright acidity and texture of the Chenin Blanc complement the tangy cheese and crisp apple. Offer bread or crackers if desired.

Pair light hors d'oeuvres

Invite guests to look at the wine's color (pale straw to light gold), swirl lightly to release aromatics, inhale gently to identify notes (citrus, pear, floral, or honeyed hints), then taste focusing on acidity, fruit, and finish. Discuss impressions and enjoy slowly.

Tasting steps

If not finishing the bottle, reseal with the original cork (inserted with the stained end in) or a vacuum stopper and store upright in the refrigerator. Consume within 3–5 days for best freshness.
