Adjust sweetness/acidity

Fill four wine glasses or tumblers with ice (about 3/4 cup ice per glass).

Prepare glasses

Pour the wine-citrus blend evenly into the prepared glasses, leaving room at the top. Top each glass with about 1/4 cup club soda to add effervescence and lift the aromatics.

Pour and top with fizz

Garnish each glass with an orange peel twist tucked onto the rim and, if desired, drop in a star anise for aroma. Serve immediately while sparkling and bright.
