Place the Las Jara Glou Glou 2022 bottle in the refrigerator for 60–90 minutes prior to serving for a lively chill (or 20–30 minutes in a freezer wrapped in a kitchen towel). The wine is meant to be served cool, not icy.

Chill the bottle

If you need faster chilling or want to keep the bottle cool while serving, fill an ice bucket or large bowl halfway with ice cubes and a splash of water, then nestle the bottle in the ice for 10–15 minutes until the bottle feels cold to the touch.

Ice bucket method

Use large wine glasses. Pour modest pours (4–5 oz / ~120–150 ml) to keep the wine cool and let guests top up. Encourage leaving a little air in the glass to showcase the wine's fruity, expressive aromatics.

Pouring and glassware

On a large board or platter, fan the prosciutto and salami into small piles. Cut the Manchego into 1/4-inch slices or small wedges. Place the goat cheese log on the board with a small cheese knife for spreading.

Arrange cured meats and cheeses

Scatter Marcona almonds and cherry tomatoes in small bowls or piles on the board. Place cornichons near the cured meats to provide a bright vinegar contrast that plays well with the wine's fruit-forward profile.

Add crunchy and acidic elements

Halve and pit the peaches. Heat a grill pan or skillet over medium-high heat until hot. Lightly brush peach halves with a teaspoon of olive oil and sear cut-side down until char marks form, 2–3 minutes. Remove and slice into wedges. Arrange on the board—these bring a sweet-sour note that complements the Glou Glou's juiciness.

Prepare charred peaches (optional)

Add clusters of green grapes, drizzle 2 tbs honey over or next to the goat cheese, and place the sliced baguette and crackers for spreading and pairing. Keep the board refrigerated until just before serving if assembling more than 30 minutes ahead.

Finish board

In a large bowl, combine the baby arugula, sliced peaches, and cucumber. Crumble the feta cheese on top.

Assemble salad

Whisk together 2 tbs extra-virgin olive oil, 1 tbs sherry vinegar (or white balsamic), 1 tsp sea salt, and 1 tsp freshly ground black pepper in a small bowl until emulsified.

Make dressing

Pour the dressing over the salad and toss gently to coat. Taste and adjust seasoning if needed. Serve immediately alongside chilled Las Jara Glou Glou 2022.
