Chill the Casa Jipi Rosado to the ideal serving temperature (approximately 8–10°C / 46–50°F). If the bottle is at room temperature, place it in the refrigerator for 90–120 minutes or in an ice bucket with equal parts ice and water for 20–30 minutes.

About 10 minutes before serving, remove the bottle from the fridge so aromas can open slightly. Keep it cool but not too cold to mute flavor.

Use chilled white wine glasses for service—four glasses recommended for a 750 ml bottle. Lightly rinse glasses with cold water and let drain, or place them briefly in a low-temperature glass chiller.

Open the bottle by cutting the foil and using a waiter’s corkscrew. Wipe the neck clean after removing the cork.

Pour a small tasting (30–45 ml) to assess aroma and balance, then fill each glass to about one-third full (125–150 ml per pour) so there is room to swirl and enjoy the wine’s aromatics.

Rinse strawberries under cold water, hull and halve them. Place two halves on the rim of each glass or in a small dish to accompany the pour. If using lemon twists, use a vegetable peeler to remove a thin strip of zest without much pith, twist over the glass to release oils and drop it in.

Prepare fruit garnish

Bring the goat cheese to near room temperature so it’s creamy (about 15–20 minutes out of the fridge). Arrange the goat cheese on a small board with thin slices of Serrano ham or prosciutto folded beside it. Add toasted bread or crostini and a small pile of almonds.

Assemble cheese & charcuterie pairing

Place the bottle on the table or decant into a small carafe if desired (this wine is a rosado and typically does not require extended aeration). Offer the pairing board and garnishes. Encourage guests to sip and note the wine’s balanced fruit and refreshing acidity—pair bites with sips to highlight complementary flavors (strawberries echo the rosado fruit; goat cheese plays with acidity; ham and almonds add savory contrast).

Serve and enjoy

When finished, re-cork any remaining wine and refrigerate. Consume rosado within 2–3 days for best freshness.
