Chill the bottle to 15–18°C (59–64°F). Remove from refrigerator about 30 minutes before serving if served too cold; if too warm, chill 20–30 minutes. This wine is best slightly below typical room temperature to show structure while keeping fruit forward.

Prepare bottle

Stand the bottle upright for at least 30 minutes before opening if recently moved. Open the bottle with a corkscrew. Pour into a decanter and let breathe for 30–60 minutes if the wine is young or if you want the aromatics to open; for an earlier-drinking profile 20–30 minutes may suffice. If you prefer more primary fruit, serve directly from the bottle.

Decant (optional)

Use large-bowled red wine glasses to concentrate aromas. Pour 120–150 ml per person (roughly 5 oz). Hold the glass by the stem to avoid warming the wine and swirl gently to release aromas.

Glassware & pour

Before sipping, note the deep ruby to garnet color. Expect bold black fruit (blackberry, plum), spice (white pepper, clove), subtle floral notes, and a touch of savoury/earthy undertones with firm but ripe tannins and balanced oak.

Tasting notes

Red meats: Serve with grilled lamb chops or a spiced beef stew. For lamb chops, season with salt, pepper and a pinch of smoked paprika, grill to medium-rare/medium, and serve with pan juices to complement the wine's spicy fruit.

Cheese & vegetables: Offer aged cheddar or manchego and charred vegetables as a lighter pairing. The wine’s tannins will be softened by fat from cheese and by grilled vegetables’ smokiness.

Leftovers & storage: Reseal with the original cork or with a wine stopper and refrigerate upright. Consume within 3–5 days for best flavor; decanted portions may fade sooner.
