Method

Bacon Jam

Render bacon

In a medium skillet over medium heat, add the diced bacon. Cook until the fat is rendered and pieces are crisp-tender, about 8–10 minutes, stirring occasionally.

Sauté aromatics

Using a slotted spoon, transfer most of the bacon to a bowl leaving about 1–2 tablespoons of bacon fat in the skillet. Add the diced onion and cook over medium heat until translucent and beginning to brown, 6–8 minutes. Add minced garlic and cook 30 seconds until fragrant.

Combine and jam

Return the bacon to the skillet. Add brown sugar, maple syrup, apple cider vinegar, black pepper and 1 tablespoon water to deglaze the pan. Stir and reduce heat to low. Simmer gently until mixture thickens to a jam-like consistency, about 6–8 minutes. Taste and adjust sweetness or acidity. Remove from heat and set aside; jam will thicken more as it cools.

Tater Tots

Heat oven to 425°F (220°C) or preheat air fryer to 400°F (200°C). Spread tater tots in a single layer on a parchment-lined baking sheet or in the air-fryer basket. Lightly toss with 1 tablespoon oil and sprinkle 1/2 teaspoon salt. Bake 20–25 minutes in oven, turning once halfway, until golden and crisp. If using air fryer, cook 12–15 minutes shaking basket once. Keep warm.

Mini Scramble

In a bowl, whisk together eggs, milk, 1 teaspoon salt, 1 teaspoon pepper and chopped chives until just combined.

Heat a nonstick skillet over medium-low and add 1 tablespoon butter or olive oil. Pour in the egg mixture. Cook slowly, stirring gently with a spatula and folding the eggs until they form soft curds and are just set but still moist, about 4–6 minutes. Remove from heat (eggs will continue to cook slightly). Keep warm.

Prickly Pear Cactus Sauce

In a small bowl whisk together prickly pear syrup/puree, lime juice, mayonnaise, hot sauce (if using) and 1/4 teaspoon salt until smooth. Taste and adjust balance — add more mayo to mellow, more lime to brighten, or a pinch of salt. Refrigerate until assembly.

Croissant & Assembly

Halve the croissants horizontally. Spread a thin layer of butter on cut sides. In a skillet over medium heat (or on a griddle), toast cut sides buttered-side down until golden and slightly crisp, about 1–2 minutes.

Slice the avocado in half, remove pit, and scoop flesh into a bowl. Lightly mash with a fork and season with a pinch of salt and a squeeze of lime or a drop of the prickly pear sauce if desired.

To assemble each sandwich: On the bottom croissant half, spread about 1 tablespoon prickly pear cactus sauce. Add a generous tablespoon of warm bacon jam on top of the sauce. Arrange 4 crispy tater tots across the jam (for each sandwich) so they sit as a crunchy layer. Spoon a portion of the mini scramble (about 1/4 of the scramble per sandwich). Top eggs with 1/4 cup sharp cheddar (or a slice). Add ~2 tablespoons mashed avocado and a few microgreens or cilantro if using. Cap with the croissant top.

If you prefer the cheese melted: place assembled open-faced under a broiler for 30–60 seconds until cheese softens, then close sandwich. Serve immediately.
