OLD FASHIONED

Our signature Dead Man’s Ale is sure to please anyone’s pirate pallet. Served all day at the Black Pearl Restaurant and the Thirsty Pirate Beach Bar.

Combine brown sugar and water in a small saucepan over low heat. Stir until sugar dissolves, then add ground cinnamon, ground allspice, and crushed cloves. Warm gently for 2–3 minutes to infuse flavors, stirring occasionally. Do not boil. Remove from heat and let steep 5 minutes, then strain out solids into a small measuring cup. Cool slightly.

Make syrup

If rimming, moisten the glass rim with a lime wedge, then dip into demerara sugar to coat. Fill glass with a few ice cubes if you prefer the ale chilled and slightly diluted (optional).

Pour the amber ale into a chilled pint glass (about 16 oz). Gently add the dark stout to the ale by pouring slowly over the back of a spoon to create a subtle layered look, or simply add and let it mingle for a richer body.

Layer and combine

Stir in the prepared spiced syrup (about 2 tbs). Add the lime and orange juice, then add the Angostura bitters. Stir gently once or twice to incorporate flavors without flattening the beer excessively.

Add flavorings

If using, float the dark rum on top by pouring slowly over the back of a spoon (about 1/2 oz). This makes the drink stronger and adds warm caramel notes.

Optional rum finish

Garnish with a lime wheel or orange twist on the rim. Serve immediately with a straw or beer coaster. Encourage guests to sip and enjoy the interplay of malty ale, spiced syrup, citrus, bitters, and the optional rum kick.
