Preheat and prep

Preheat a nonstick griddle or large skillet over medium heat (about 375°F / 190°C if using an infrared thermometer). Lightly grease with a thin film of oil or butter; keep at low heat while you mix batter so it stays warm but not smoking.

In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

In a separate bowl or large measuring cup whisk the egg lightly, then add milk, melted butter, and vanilla extract. Whisk until blended.

Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix; a few small lumps are fine. Let the batter rest 5 minutes to hydrate the flour and allow bubbles to form.

Add-ins

Choose your add-in: strawberries, blueberries, or chocolate chips (or a combination). If using strawberries, hull and quarter them so pieces are bite-sized. Pat berries dry with paper towel to reduce excess moisture.

Gently fold the chosen add-in into the batter just until distributed. Use about 1 cup strawberries, 1 cup blueberries, or 3/4 cup chocolate chips. If using berries, fold lightly to avoid crushing; if using chocolate chips, fold evenly so chips do not sink all to the bottom.

Cook

Bring griddle heat to medium (griddle should register ~375°F). Brush or wipe a thin film of oil or melted butter across the surface.

For each pancake, pour about 1/4 cup (60 ml) batter onto the hot griddle, leaving at least 2 inches between pancakes. If you did not fold add-ins into the batter, spoon a few berries or chocolate chips onto the surface of each poured pancake now.

Cook until bubbles form evenly across the surface and the edges look set, about 2 to 3 minutes. Gently lift an edge with a spatula to check that the underside is golden-brown.

Flip and cook the second side until golden and cooked through, about 1 to 2 more minutes. Transfer cooked pancakes to a warm plate and keep loosely covered while you cook remaining batter. Re-grease the griddle as needed between batches.

Serve

Stack pancakes and serve immediately with maple syrup and/or a dusting of powdered sugar. If using berries, garnish with a few extra fresh berries. If using chocolate chips, a light sprinkle of flaky salt is optional.
