Clean and sanitize all brewing equipment including fermenters, bottles, and any utensils you'll be using.

Prepare the Equipment

In a large pot, heat 6 liters of water to about 76°C (170°F). This will be used for mashing.

Heat Water

Add 5 cups of Pale Malt and 1 cup of Crystal Malt to the heated water. Stir well and maintain the temperature at around 66°C (150°F) for 60 minutes.

Mash the Grains

After mashing, sparge the grains with hot water to collect the wort. Aim for a final volume of about 5 liters.

Sparging

Bring the wort to a boil and add 1 cup of Cascade Hops. Boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add 0.5 cups of Centennial Hops and 0.25 cups of Simcoe Hops.

Add Additional Hops

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a fermenter and pitch 1 package of American Ale Yeast. Seal the fermenter and allow it to ferment for about 1-2 weeks.

Pitch the Yeast

After fermentation is complete, dissolve 0.5 cups of priming sugar in boiled water and allow it to cool.

Prepare for Bottling

Mix the cooled priming sugar solution with the beer and transfer it into sanitized bottles. Cap the bottles and allow them to carbonate for 1-2 weeks at room temperature.

Bottle the Beer

After carbonation, chill the bottles in the fridge, pour into a glass, and enjoy your homemade Mondo ‘Dennis Hoppr’ IPA!
