Smooth & zesty with flavours of tropical mango and citrus. Fruity with a dry finish.

In a large pot, heat 10 cups of water to approximately 160°F (71°C). Add the gluten-free pale malt and crystal malt. Stir well to combine.

Prepare the Mash

Maintain the temperature for 60 minutes, stirring occasionally. This allows the enzymes to convert the starches into fermentable sugars.

Mash Process

After mashing, remove the grains and bring the liquid to a boil. Once boiling, add 0.5 cups of Citra hops and boil for 60 minutes.

Boil the Wort

With 10 minutes remaining in the boil, add 0.25 cups of Mosaic hops for flavor and aroma.

Once the boiling time is complete, remove from heat and cool the wort quickly to around 70°F (21°C).

Once cooled, transfer the wort to a sanitized fermenter and add the gluten-free yeast. Stir well to incorporate.

Pitch the Yeast

Stir in 1 cup of mango puree and 1 tablespoon of lemon zest for flavor. Seal the fermenter with an airlock.

Allow the beer to ferment at room temperature for 7-14 days, until fermentation activity has ceased.

Fermentation Period

Dissolve 0.5 cups of priming sugar in 1 cup of water and boil for 5 minutes. Allow to cool.

Prepare Bottling

Transfer the fermented beer to a bottling bucket and mix in the priming sugar solution. Bottle the beer using sanitized bottles and caps.

Bottle the Beer

Allow the bottled beer to carbonate at room temperature for 1-2 weeks.
