In a large pot, heat 6 liters of water to 170°F (77°C). Add the pale malt, caramel malt, and wheat malt to the water.

Prepare the Mash

Maintain the mash temperature at approximately 152°F (67°C) for 60 minutes, stirring occasionally.

After the mash, sparge the grains with hot water to collect around 6 liters of wort.

Sparging

Bring the collected wort to a boil in a large brew kettle.

Bring to Boil

Once boiling, add 1 oz of Citra hops and boil for 60 minutes. Add 0.5 oz of Simcoe hops at 30 minutes, 0.5 oz of Mosaic hops at 15 minutes, and 0.5 oz of Cascade hops at flameout.

After boiling, cool the wort quickly to around 70°F (21°C) using a wort chiller or an ice bath.

Transfer the cooled wort to a sanitized fermentation vessel and pitch the American Ale yeast.

Pitch the Yeast

Seal the fermentation vessel and allow fermentation to take place for about 1-2 weeks at around 68°F (20°C).

Prepare Bottles

Transfer the beer to the bottling bucket, carbonate it with priming sugar if desired, and bottle.

Bottle the Beer

Let the bottles condition at room temperature for about 1-2 weeks before chilling and enjoying.
