Combine ingredients
Add 2 oz Dillon's Vodka, 1 oz Aperol, 1 oz fresh orange juice, 0.5 oz fresh lemon juice, and 0.5 oz simple syrup into a cocktail shaker.
First dry shake
Add 0.75 oz plant-based foamer (aquafaba or commercial vegan foamer) to the shaker. Seal and shake vigorously without ice for 15–20 seconds to begin emulsifying the foamer and incorporate air.
Wet shake
Open the shaker and add a generous handful of ice (about 6 cubes). Seal and shake hard for 10–15 seconds until the shaker is very cold to the touch and well-aerated.
Double strain
Double-strain the cocktail into a chilled coupe or rocks glass (use a fine mesh strainer over a hawthorne if available) to remove ice shards and ensure a silky texture.
Finish & Garnish
Top the finished cocktail with 2 dashes of orange bitters spread evenly over the foam — this helps aromatics and creates subtle color contrast.
Using a microplane or fine grater, grate about 0.25 tsp fresh orange zest over the foam for an intense citrus aroma. Finish with a thin orange wheel or twist set on the rim or floated on the foam as a visual accent.
Serve immediately. Suggestion: provide a straw or instruct guests to sip through the foam to enjoy the layered aroma and flavors.
