Method

Prepare mint-sugar

Muddle mint with sugar

Place the granulated sugar and packed fresh mint leaves in a sturdy mixing glass or cocktail shaker. Use a muddler or the back of a spoon to gently muddle the mint into the sugar 10–15 times until the leaves are aromatic and the sugar is lightly green — this releases the mint oils and slightly dissolves the sugar.

Mix juices

Add the fresh orange juice, pineapple juice, and passion fruit puree to the shaker or mixing glass with the muddled mint and sugar.

Fill the shaker with crushed ice (about 1 to 1 1/2 cups) or add ice cubes, secure the lid, and shake vigorously for 10–15 seconds until well chilled and the mixture is slightly frothy.

Strain & serve

Prepare two serving glasses by filling them with the remaining crushed ice or ice cubes (about 1/2 cup each). Strain the shaken mixture evenly into the glasses. If you prefer more mint flecks, use a fine strainer; for a brighter mint aroma, double-strain to remove leaf bits.

Garnish each glass with an orange wheel or pineapple wedge and a mint sprig. Taste and, if you prefer sweeter, stir in up to 1 teaspoon extra sugar per glass until dissolved.

Serve immediately with a straw. Optionally, lightly clap the garnish mint sprig between your palms and place it on top to release extra aroma.
