Combine ingredients
Fill a cocktail shaker about two-thirds with ice. Add 2 oz Beefeater gin, 0.5 oz Cherry Heering, 0.25 oz Bénédictine, 0.25 oz Cointreau, 0.5 oz fresh lime juice, 1.5 oz pineapple juice, 0.25 oz grenadine, and 1 dash Angostura bitters into the shaker.
Shake
Secure the shaker lid and shake vigorously for 10–15 seconds until the shaker feels well chilled and slightly frosty on the outside. This dilutes and chills the mix to proper balance.
Prepare glass
Fill a highball or Collins glass with fresh ice (crushed or cubed, about 3/4 full).
Strain
Double-strain the contents of the shaker into the prepared glass over the ice using a Hawthorne and fine strainer (or just a Hawthorne if fine strainer not available) to remove small ice shards and any pulp.
Garnish & Finish
Thread a maraschino cherry on a cocktail pick and place next to a pineapple wedge on the rim of the glass, or simply drop the cherry into the drink and rest the wedge on the rim.
Optionally add a short straw. Serve immediately.
