Prepare ingredients

If using fresh passionfruit, scoop out pulp and seeds from one half and measure approximately 1/2 oz–1 oz of pulp depending on desired intensity. If using passionfruit liqueur or purée, measure 1 oz. Chill Prosecco or sparkling wine and set aside.

Dry shake (if using egg white)

Add 2 oz blanco tequila, 1 oz passionfruit liqueur/purée, 1/2 oz vanilla syrup, 1/2 oz fresh lime juice, 1/4 oz falernum and 1/2 oz egg white to a cocktail shaker (no ice). Dry-shake vigorously for 12–20 seconds to emulsify and build a foamy texture.

Wet shake

Add a generous scoop of ice to the shaker. Shake hard for 10–15 seconds until the shaker exterior becomes very cold and the mixture is well chilled and slightly diluted.

Strain

Double-strain the cocktail into a chilled coupe or martini glass using a fine mesh strainer to remove ice shards and passionfruit seeds (if desired) for a smooth finish. If you prefer seeds and texture, single strain is fine.

Garnish & Serve

Float or place the reserved half passionfruit (pulp side up) in the finished cocktail, or spoon about 1/2 oz fresh pulp on top for aroma and visual appeal.

Serve the chilled 2 oz Prosecco on the side in a small flute or pour a splash (about 2 oz) into the drink per guest preference. Present the sparkling wine separately so the drinker can sip it alongside or top the cocktail with it.

Optional: If you did not use egg white, dry shake step can be skipped. If you want more vanilla aroma, scrape a small amount of vanilla bean onto the foam or rim the glass lightly with vanilla syrup.
