Prepare glass and dissolve sugar
Place a sugar cube in an old-fashioned (rocks) glass. Add the Angostura bitters directly onto the sugar cube (about 3 dashes). Add 1 teaspoon of water. Using a muddler or the back of a spoon, press and grind the sugar cube with the bitters until mostly dissolved and a paste forms. If using simple or demerara syrup instead of a cube, add 1/4 oz syrup and skip muddling.
Add ice and finish stirring
Add one large ice cube or ice sphere to the glass. Stir gently but thoroughly for 15β20 seconds (about 10β15 strokes) to chill and slightly dilute the drink, integrating flavors.
