Blend hummus

Place the drained chickpeas, tahini, lemon juice, garlic, cumin, olive oil and kosher salt in a food processor. Process for 1 minute until coarse. Scrape down sides.

With the processor running, add cold water, 1 tablespoon at a time, and process until the hummus is very smooth and creamy, about 30–60 seconds more. Taste and adjust salt or lemon as needed.

Spoon hummus into a shallow serving bowl, create a small well in the center with the back of a spoon, drizzle with 1 tablespoon olive oil, sprinkle smoked paprika and chopped parsley.

Guacamole

In a medium bowl, scoop avocado flesh and mash lightly with a fork until mostly smooth but still slightly chunky.

Add lime juice immediately (to slow browning), then fold in chopped tomato, minced red onion, cilantro, minced jalapeño (if using), salt and pepper. Taste and adjust seasoning. Keep covered with plastic pressed onto the surface until serving to minimize oxidation.

Olives & Cheese

If olives are not already marinated, combine the Giovanna olives with 1 tablespoon olive oil, dried oregano and cracked black pepper in a small bowl. Toss to coat and let sit at room temperature for 10–15 minutes to develop flavor.

If using a block of feta, transfer to a small dish and drizzle with a little olive oil and a pinch of oregano and cracked pepper. Alternatively crumble feta into a small bowl and drizzle with oil.

Bread & Assembly

Preheat oven to 375°F (190°C). Lightly brush pitta breads with 1 tablespoon olive oil, sprinkle a little sea salt, stack on a baking sheet and warm for 6–8 minutes until soft and slightly puffed. Alternatively, warm on a hot skillet 1–2 minutes per side.

Choose a large wooden board or platter. Arrange the hummus bowl, a small bowl of guacamole, the olives, and the feta on the board with space between each component.

Fan or tear the warmed pitta breads and place them in a pile on the board. Add any extra garnishes: lemon wedges, extra olive oil, or additional herbs.

Serve immediately, encouraging guests to dip with pitta, scoop hummus, or combine elements (hummus + olives + feta) as desired.
