Method
Prepare glass
Salt rim
Run a lime wedge around the outer rim of a coupe or rocks glass (or both rims if preferred). Pour the kosher or sea salt onto a small plate and gently dip the moistened rim into the salt to coat. Tap off excess. Set glass aside.
Mix cocktail
Add 2 oz Olmeca Blanco tequila, 1 oz Cointreau, and 1 oz freshly squeezed lime juice to a cocktail shaker.
If you prefer a slightly sweeter/more balanced drink, add 0.25 oz agave syrup to the shaker.
Fill the shaker with about 1 cup of ice (enough to chill well).
Shake vigorously for 10–15 seconds until the outside of the shaker is frosty and the mixture is well chilled.
Serve
Strain the cocktail through a fine strainer (or the shaker's strainer) into the prepared glass. For a classic presentation use a chilled coupe or rocks glass without ice ("up"). If you prefer "on the rocks," fill the prepared glass with about 1/2 cup fresh ice and then strain the cocktail over the ice.
Garnish with the reserved lime wedge on the rim or floated on the drink. Serve immediately.
For a frozen variation: combine ingredients (tequila, Cointreau, lime juice, optional agave) with 1.5 cups crushed ice in a blender and blend until smooth. Pour into a salted glass and garnish with a lime wedge.
