1

Prepare the lime

Wash the lime. Cut off the ends, then cut the lime into 8 wedges (quarter the lime lengthwise, then halve each quarter).

2

Muddle lime and sugar

Place the lime wedges (including peel and pith) into a sturdy old-fashioned glass. Add the 2 teaspoons granulated sugar on top of the lime. Using a muddler or the handle of a wooden spoon, press and twist firmly 8–10 times to release the juice and essential oils from the peel. Aim to dissolve the sugar into the lime juice—do not pulverize the peel into tiny bits.

3

Add cachaça

Pour 2 oz cachaça over the muddled lime and sugar. Give the mixture a short stir (4–6 seconds) to further dissolve sugar and integrate flavors.

4

Add ice and finish

Fill the glass nearly to the top with crushed ice (about 1 cup). Stir vigorously for 10–15 seconds to chill and slightly dilute the cocktail, integrating the cachaça with the lime-sugar base.

5

Garnish and serve

Optional: tuck one lime wedge on the rim as garnish. Serve immediately with a short straw so the drink can be re-stirred as it melts.
