Prepare lime and apple

Cut the lime in half. Reserve one thin wedge for garnish and cut the remaining half into 2–3 small wedges. Core half an apple and thinly slice; set aside a thin apple slice for garnish and use the rest in the drink.

Place the lime wedges and apple slices into a sturdy highball or Collins glass.

Pour in the apple juice (120 ml) over the fruit in the glass.

Add the granulated sugar (2 tsp) and the fresh mint leaves (10 leaves) to the glass with the fruit and apple juice.

Muddle gently

Using a muddler or the back of a spoon, gently press and twist to bruise the mint and crush the lime and apple pieces to release juices and essential oils. Aim for aromatic release without shredding the mint into tiny bits (about 8–10 gentle presses).

Sparkle & Finish

Fill the glass with ice cubes to near the top (about 1 cup).

Pour in the soda water (120 ml) over the ice. Stir gently with a long bar spoon to combine the muddled fruit, mint, apple juice and soda—about 6–8 gentle stirs—to avoid flattening the bubbles.

Taste and adjust: if you prefer sweeter, add up to 1 additional teaspoon of sugar and stir until dissolved; if more tartness is desired, squeeze the reserved lime wedge into the drink.

Garnish with the reserved thin apple slice and a sprig of mint on top. Optionally rim the glass with a small sugar sprinkle for visual appeal.

Serve immediately with a straw or stirring stick.
