Brewing Process

1. Prepare the Mash

In a large pot, heat 5 liters of water to approximately 160°F (71°C). Add 6 cups of pale malt, 1 cup of caramel malt, and 0.25 cups of chocolate malt to the pot. Stir well to combine.

2. Mash Rest

Allow the mixture to rest for 60 minutes, maintaining the temperature around 150°F (65°C) to allow enzymes to convert the starches to sugars.

3. Sparging

After the mash rest, sparge the grains with additional hot water to extract as much sugar as possible. Collect the liquid (wort) into a separate pot.

4. Boil the Wort

Bring the wort to a boil. Once boiling, add 2 tablespoons of Cascade hops and 1 tablespoon of Centennial hops. Boil for 60 minutes.

5. Add Flavoring Ingredients

In the last 15 minutes of the boil, add 1 tablespoon of orange peel, 1 teaspoon of coriander, and 0.5 cups of brown sugar to the pot.

6. Cool the Wort

After the boiling process, cool the wort quickly using an immersion chiller or by placing the pot in an ice bath until it reaches around 70°F (21°C).

7. Pitch the Yeast

Transfer the cooled wort to a sanitized fermenter and sprinkle 1 tablespoon of ale yeast on top. Seal the fermenter with an airlock.

8. Fermentation

Allow the beer to ferment in a dark, cool place for 1-2 weeks, checking periodically for activity in the airlock.

9. Bottling

Once fermentation is complete, siphon the beer into sanitized bottles and cap them. Allow the beer to carbonate for an additional 1-2 weeks.

10. Enjoy

Chill the bottles in the refrigerator and enjoy your homemade Sam Adams Seasonal beer!
